I was a chef for many years and like many chef owners I wanted a restaurant for the freedom of cooking my food and seeing my wildest dreams come to life.
Reality hit, and itwas more about P & L statements than chasing chefs hats as I struggled to make a real living.
Even though I ran tight ship with my food costings, I still had front of house & the business side to contend with, it just become too much.
After two years, I came to a realisation that it was less stressful and a lot easier being an employee; the money was not really much different, all things considered.
I left the industry in 2009, completely shattered and broken. “I will never work in hospitality again.” I would often tell my family.
I went to work sales & marketing, both online and traditional and ran another business. The truth was, I was really pissed off over leaving hospitality because I knew I could make it.
I had an idea, I sat down with a huge sketch pad and started writing notes, flow charts, spreadsheets and everything I could think of that seemed useful to a restaurant owner. I mapped out what I believed was the road map to a successful restaurant. Recording key metrics, KPIs, SOPs, upselling scripts, break even points, minimal number of rostered hours. The works!
I called the program The Restaurant Accelerator.
I returned to the kitchen I was totally shocked. Wages were so high, yet the staff was so under skilled. Food prices had risen enormously, but meal prices barely budged in years.
Too many venues are running single-digit profit margins.
Over the next two years I helped several restaurants throughout South Gippsland, go from barely scraping by each month to a profitable business using my system.
I had some failures too. Financial pressures became too much and some shut down. Those venues that didn’t make it had very clear warning signs. They become easily identifiable and I learnt to navigate the warning signs and avoid all the pitfalls.
There was nothing good about seeing someone work the ass off and save every cent to open their dream business, then seeing it crumble, along with their savings.
I've spent the best part of the last next four years trialing, refining, and battle-testing my theory, both front and back of house working as head chef and following my system.
What I had written down, from my years working as a head chef, sales manager, and business owner, I implemented, trialed, reviewed, and defined until I was satisfied that I had a solid system to help any hospo venue owner
